Jewish (German) Apple Cake
- 6 medium size cooking apples
- 4-5 Tbsp sugar (depending on the tartness of the apples)
- 2 Tsp. Cinammon
- 3 cups flour
- 2 cups sugar
- 1 cup vegetable oil (Canola or Sunflower)
- 4 large eggs (plus 1 additional if batter is too thick)
- 2 1/2 Tsp. vanilla
- 1 Tsp. salt
- 3 Tsp. baking powder
- Peel and dice apples into thimble size pieces. Mix 4-5 tbsp. sugar with cinammon and sprinkle over apples. Set aside.
- Mix flour, baking powder and salt. Add eggs, sugar, oil and vanilla. Beat until smooth. Pour (or spoon; the batter is thick) half the batter into a greased, floured 8" tube or bundt type pan. Cover with half the apples. Spoon the rest of the batter over the apples and top with remaining apples. Bake at 350 for 1 1/2 hours.
