Jalapeno Poppers
- 1 lb fresh jalapeno chiles
- 8 oz cream cheese, softened
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked & crumbled
- 1/4 tsp salt
- 1/4 tsp chili powder
- 1/2 cup panko bread crumbs
- Preheat oven to 300 degrees.
- 1. Slice jalapenos in half lengthwise. Discard the seeds & veins; rinse.
- 2. Combine the cream cheese, mozzarella, cheddar cheese, bacon, salt & chili powder in a bowl; mix well.
- 3. Stuff each jalapeno half with 1 tsp of the cream cheese mixture, rounding the top.
- 4. Coat with bread crumbs.
- 5. Arrange cheese side up in a single layer on a baking sheet.
- 6. Bake for 20 minutes for hot poppers, 30 minutes for medium-hot poppers, or 40 minutes for mild poppers.
