Fried Spring Rolls
- 1 Bag bean threads/cellophane noodles (10 oz.)
- 1 1/2 lb. Ground pork (optional)
- 1 Cabbage/carrot bag mix(10 oz.)
- 1 Sweet onion, chopped
- 2 Tbls. Oyster Sauce
- 2 Tbls. Soy Sauce (low sodium)
- 1 Tbls. Fish sauce
- 2 Eggs, divided
- 1/2 C. Green onion, chopped
- Salt and Pepper to taste
- Rice paper sheets/Tapioca sheets (roughly 20)
- Cilantro (optional)
- Firstly, follow the directions on heating/soaking bean threads. Drain, set aside.
- Next, combine the first 10 ingredients (including the bean threads) in a large bowl, and only one egg. Mix together.
- Take last egg and break and scramble in a separate small bowl. Set aside.
- Lastly, follow the directions on heating/soaking rice paper sheets.
- One at a time soak rice paper, pat dry, and add a 1/4 cup (or so) scoop of mixture into the center of the rice paper. Roll and seal with egg. Repeat until there is no mixture left.
- Fry in fryer or in a deep pot of oil. Check to see if oil is hot enough by flicking water into oil. It should sizzle!!
