Braised Bbq Brisket

  1. The Night before:
  2. -Rub Brisket with Cajun Spices
  3. -Let sit overnight
  4. The Day of:
  5. -Allow to come to room temperature
  6. -Preheat Oven to 325 degrees
  7. -Heat Oil in large Dutch Oven
  8. -Sear Brisket on all sides until crust forms
  9. -Remove to the side
  10. -Cook onions in oil and brown bits until translucent
  11. -Add Jalapeno and Garlic and cook for a few minutes
  12. -Deglaze with bourbon pulling up brown bits from bottom of pan. Letting the alcohol cook off
  13. -Add BBQ sauce and allow to boil for several minutes
  14. -Add Beer and mix together
  15. -Return Brisket to pot
  16. -Cook Covered for 3 hours
  17. -Gently remove brisket from pot
  18. -Cool Liquid and skim fat if desired
  19. -Blend Sauce to smooth with hand blender or in cuisinart
  20. -Return brisket and sauce to pot and heat and serve
  21. BBQ sauce Recipe: Makes 4 cups
  22. 1 cup Heinz Chili sauce
  23. 1Cup Ketchup
  24. 1/2 Cup Cider Vinegar
  25. 4 T Lemon Juice
  26. 4 T Brown Sugar
  27. 2 T Molasses
  28. 4 t Kosher Salt
  29. 4 t Dry Mustard
  30. 1 t ground pepper
  31. 1 t Paprika
  32. Combine and whisk
