Braised Bbq Brisket
- 4 1/2 lb Brisket
- BBQ or Cajun rub (such as Essence)
- 2 Medium Yellow Onions Diced
- 2 Jalapenos Seeded and Diced
- 3 Cloves of Garlic minced
- 1 1/2 bottles flavorful Beer
- 1/2 cup Bourbon
- Vegetable oil
- BBQ Sauce: recipe follows
- The Night before:
- -Rub Brisket with Cajun Spices
- -Let sit overnight
- The Day of:
- -Allow to come to room temperature
- -Preheat Oven to 325 degrees
- -Heat Oil in large Dutch Oven
- -Sear Brisket on all sides until crust forms
- -Remove to the side
- -Cook onions in oil and brown bits until translucent
- -Add Jalapeno and Garlic and cook for a few minutes
- -Deglaze with bourbon pulling up brown bits from bottom of pan. Letting the alcohol cook off
- -Add BBQ sauce and allow to boil for several minutes
- -Add Beer and mix together
- -Return Brisket to pot
- -Cook Covered for 3 hours
- -Gently remove brisket from pot
- -Cool Liquid and skim fat if desired
- -Blend Sauce to smooth with hand blender or in cuisinart
- -Return brisket and sauce to pot and heat and serve
- BBQ sauce Recipe: Makes 4 cups
- 1 cup Heinz Chili sauce
- 1Cup Ketchup
- 1/2 Cup Cider Vinegar
- 4 T Lemon Juice
- 4 T Brown Sugar
- 2 T Molasses
- 4 t Kosher Salt
- 4 t Dry Mustard
- 1 t ground pepper
- 1 t Paprika
- Combine and whisk
