Bobbie'S Banana Bread
- 3 medium bananas, mashed
- 1/2 c. butter
- 1/2 c. brown sugar
- 1/2 c. granulated sugar
- 2 eggs
- 1/4 c. plain yogurt or sour cream
- 1 tsp. vanilla
- 2 c. flour
- 1/4 tsp. salt
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. cinnamon
- 1/8 tsp. cardamom
- 1/8 tsp. nutmeg
- 1/8 tsp. allspice
- 1/2 -1 c. chopped nuts, optional (I use pecans, and I often toast them first)
- Preheat the oven to 350. Grease a large loaf pan.
- Cream together the butter and the sugars. Add in the mashed bananas, and beat well. Add in the eggs, one at a time, beating well after each addition. Add in the yogurt and vanilla.
- Sift together the flour and all the dry ingredients except the nuts. Add this to the batter, and mix well. Stir in the nuts.
- Pour the batter into the loaf pan and bake at 350 for 45-50 minutes, until a toothpick inserted into the center of the loaf comes out clean.
