Cheesecake Base
- Crust:
- 2 cups crushed graham crackers
- 2 tablespoons sugar
- 1/2 cup melted butter

- Base:
- 4 8oz bars of cream cheese
- 1 and 1/4 cup of sugar
- 1/4 cup cornstarch
- 1 tablespoon vanilla extract
- 2 eggs
- 1/2 cup sour cream
- Set oven to 350 degrees
- Crust:
- Mix ingerdients
- Bake for 10 minutes at 350
- Remove from oven and let cool
- Base:
- Mix room temp cream cheese with sugar and cornstarch until creamy, scraping bowl as necessary to ensure even mixing.
- Blend in 1 egg at a time.
- Mix in sour cream and vanilla extract.
- Bake in water bath for ~80 min, or until edges are firm and only the center jiggles.
- Remove from oven and let cool for 2 hours. Cut around edges to loosen from pan.
- Chill in refrigerator over night.
