Spicey Shrimp
- 1 lb shrimp
- 1/2C butter
- 1 1/4C Sauterne wine
- 4 cloves garlic - minced
- 4 green onions - minced
- 4T diced green chile (ortega)
- 2 tomatoes - diced
- 1 or 2 jalapenos diced
- 1/3C cilantro and parsley (1/2 each, chopped)
- 1T olive oil
- fresh lemon
- Heat olive oil on med/high heat and add onion, jalapeno, green chili and tomato and saute 3 min
- Turn off heat
- In a large frying pan add butter and wine. Simmer 5 min
- Add garlic. Cook 4 more min
- Add tomato mixture to wine and butter. Continue to cook on med/high heat and mix well
- Turn up to high and add shrimp. Cook for 3 min
- Squeeze lemon juice onto shrimp
- Cook til pink/opaque - DON'T OVERCOOK
- Turn off heat and stir in parsley/cilantro
