Lentils And Sausage
- 1 3/4 cups lentils
- 2 tsp. salt
- 1 clove garlic
- 4 1/2 cups boiling water
- 3/4 lb turkey sausage
- 1 onion (chopped)
- 2 carrots (sliced)
- 8 oz. can Hunts tomato sauce
- 3 Tbs. cider vinegar
- 1.) Wash and pick over the lentils, then place them into a 4 quart baking dish and add the boiling water, salt, and garlic.
- 2.) Cover the dish and place in a 350 degree over to start baking.
- 3.) Cut the sausage into chunks and brown in a frying pan. Remove.
- 4.) Saute the onions and carrots in the drippings and then add both the sausage and the onions and carrots to the lentils.
- 5.) When lentils have baked for 45 minutes, add the tomato sauce and vinegar. Return to the over and bake uncovered for an additional 20 minutes.
