Winter Minestrone

  1. heat oil in 5 qt pan over med heat
  2. add onion, celery, garlic, and herbs
  3. cook until onion soft, about 10 minutes
  4. add barley, potatoes, carrots, stalk and turnips
  5. bring to boil over high heat
  6. reduce heat, cover and simmer for 20 minutes
  7. mix in beans with liquid, macaroni and tomato paste
  8. Bring to boil on high heat
  9. reduce heat, cover and boil gently until macaroni is tender, about 15 minutes
  10. add kale and cook uncovered until kale is tender crisp, about 5 minutes
  11. season to taste with salt and pepper
  12. add cheese at table
