Clove Scented Greens And Pasta
- 2 tblsp olive oil
- 1 onion finely chopped
- 1 bunch of chard, or kale, well washed, ribs removed, chopped
- 2-4 whole cloves
- 1 bay leaf
- 2 tblsp. veg broth or water
- 1/4 cup of walnuts
- 1 pound of fusilli
- pecorino cheese
- Cook pasta in a large pot of salted water. Drain well. Heat the olive oil on medium heat in a large skillet. Saute the onion on medium low heat for ten to fifteen minutes until very soft. Increase heat slightly, add cloves and bay leaf, saute for another two minutes. Increase heat to medium high and add greens and broth or water. Stir to cook for first minute then cover to allow to steam for an additional three to five minutes until the greens are bright and wilted. Remove the cloves and bay leaf. Add walnuts, stir to combine. Add pasta and adjust for salt and perhaps an additional tablespoon of olive oil. Serve at once with pecorino on the table.
