Chicken Scarpariello
- 4 Chicken Thighs and bones
- 8 ounces Sausage- ?Slices or whole
- 2 large yellow onions
- 2 bell peppers
- 5 cloves garlic shin sliced or minced
- 20 slice cherry tomatoes
- 1/3 cup white wine dry
- 1/3 cup Chicken Broth
- 1/3 cup Parsley - Fresh chopped coarse
- 1/3 teaspoon crushed red pepper flakes
- slice onions, peppers, garlic, cherry tomatoes, and fresh parsley for later use
- cut up chicken and slice sausage to your liking
- In a large hot non-stick skillet with high sides brown and cook the chicken for 10-15 minutes, first browning the skin side and add the sausage to bown
- remove the chicken and sausage- remove the oil in the pan
- saute first the onions, then peppers, and then garlic and pepper flakes, adding the tomatoes and
- add parsley
- add wine and chicken broth nestling chicken in the pan and cook 15 min
