Herb Lamb Patties
- 1 cup boiling water
- 1 cube Knorr Beef Bouillon
- 4 Heaping Tablespoons Matzo Meal
- 2 Slices white bread, soaked in water and squeezed dry
- 1.5 Pounds Ground Lamb meat
- 4 Green Onions, finely chopped
- 3 Cloves Garlic, minced
- 1/2 Cup Cilantro, finely chopped
- 1/2 Cup Parsley, finely chopped
- 1/4 Cup Mint Leaves, finely chopped
- 1/2 teaspoon ground Cinnamon
- pinch of salt
- 1 teaspoon Freshly ground Black Pepper
- 1 Large Egg, beaten
- 2 Tablespoon Canola Oil, divided
- Dissolve the Bouillon cube in the cup of water. Add the Matzo Meal and stir well, set aside.
- In a large bowl, combine the meat, green onions, garlic, cilantro, parsley, mint, cinnamon, salt, black pepper and egg. Mix until combined, add the squeezed bread slices and Matzo Meal continue mixing until all ingredients are combined well.
- Form patties, using wet hands (the mix will be almost soupy but should hold together) about 15-20 in numbers.
- In a large non stick saute pan, heat 1 tablespoon of the oil over medium heat, when pan is very hot, arrange patties in pan, (allow them to be close to each other), and fry without disturbing them for at 15 minutes per side. Repeat with remaining 1 Tbs oil until all patties are done on both sides.
- The patties should be crispy brown outside but soft inside, (There should not be any red meat in the middle).
- Allow to cool, serve as desired.
