Turkey Meatloaf
- Meatloaf:
- 1 tbls Olive Oil
- 2 celery stalks chopped
- 1 cup diced white mushrooms
- 1 cup chopped red and yellow sweet bell peppers
- 2 garlic gloves
- 1/2 yellow onion diced
- 1 pound lean ground turkey
- 1/4 cup fine breadcrumbs
- 1 egg
- 1/4 whole milk
- 2 tbls worcestershire sauce
- 1 tsp kosher salt
- 1 tsp ground black pepper
- Meatloaf Sauce:
- 2/3 cup Ketchup
- 2 tbls spicy mustard
- 1/4 packed dark brown sugar
- 1/2 cup left over morning coffer
- Preheat oven to 375 degrees.
- Heat olive oil in a large saute pan over medium heat. Add celery, onions, peppers and garlic, saute till soft. About 6 minutes. Remove from heat and set aside to cool.
- In a large bowl combine cooled sauteed vegetables, turkey, egg, milk, worcestershire and salt and pepper. Mix thoroughly. Add mixture to loaf pan.
- Place in pre-heated oven, un-covered for 30 minutes or until browned. Remove from oven and drain an excess fat dripping from pan.
- In a small sauce pan heat pan over medium heat and combine ketchup, mustard, brown sugar and coffee. Stir till ingredients have melted and combined. Let simmer till reduced to 1 cup. About 8 minutes.
- Spoon reduced sauce over browned meatloaf and return to over for an additional 15 minutes. Remove from over and slice, serve with additional sauce on the side.
