White Chicken Chili
- 2 (15 1/4 oz.) cans white whole kernel corn
- 2 (15 oz.) cans Great Northern beans, rinsed and drained
- 2 (4 oz.) cans diced green bell peppers
- 2 1/2 c. water
- 1 c. finely chopped onion
- 1 Tbsp. lemon or lime juice
- 1 tsp. ground cumin
- 1 tsp. lemon pepper seasoning
- 1 clove garlic, minced
- 2 c. chopped, cooked chicken
- crushed tortilla chips
- shredded cheese (Cheddar or Monterey Jack)
- In Dutch oven or large saucepan, combine undrained corn, beans, undrained chile peppers, water, onion, lemon juice, lemon pepper seasoning, cumin and garlic.
- Bring to boil; reduce heat.
- Simmer uncovered for 10 minutes.
- Stir in chicken and heat through.
- Ladle into bowls and top with crushed tortilla chips and shredded cheese.
