Chili Without Chili Powder
- 1 lb ground chicken (not lean)
- 1 large onion chopped
- 4 stalks of celery diced
- 1 tablespoon vegetable oil
- 1 cup of water
- 1 bottle of beer (light lager or pale ale)
- 1/2 cup barbecue sauce (not smoky flavored)
- 1 tablespoon ketchup
- 2 cans Brooks chili beans
- 1/2 tsp cinnamon
- 1/2 tsp clove
- 1/2 tsp allspice
- 1 tsp coriander
- 1/2 tsp cayenne
- 1 tablespoon cumin
- 1/2 ounce of un sweetened baking chocolate
- Add the vegetable oil to a large soup pot, already warmed over medium high heat.
- Add the onions and celery to the pot and sweat the onions (5 minutes).
- Add the ground meat to the celery and onion mixture and cook meat throughly.
- Add water and beer to mixture and bring to a boil. If you are using chicken or turkey as your meat I don't typically drain it but if you are using ground beef you may want to drain the excess fat.
- After bringing the water and beer to a boil, reduce the heat.
- Add beans, bbq sauce, ketchup, all spices and chocolate.
- Cover and let simmer for 90 minutes.
