Tortilla Pizza
- 1/2 lb ground beef
- (1/2 t salt, 1/4 t minced onion, 1/4 t paprika,
- 11/2 t chili powder, 2 T water)
- 8 flour tortillas
- (1 c cooking oil)
- 16 oz can refried beans
- 1/3 c diced tomatoes
- 1/3 c mild picante sauce
- 1 to 2 c cheddar/Monterey jack cheese
- 1/4 c chopped green onions
- 1/4 c sliced black olives
- Crumble and brown ground beef. Add next 5 ingredients; simmer for 10 minutes, stirring often. Meanwhile, heat oil in frying pan over medium heat. Fry each tortilla for about 30-45 seconds per side, popping any bubbles that form in tortilla, and drain on paper towel. Heat beans. Stack each pizza by spreading beans then meat evenly on 4 tortillas, top w/ another tortilla and layer salsa, tomato, cheese, onion and olives evenly. Bake @400 for 10-12 minutes.
- Serve with sliced orange wedges.
