Chocolate Gem Pie
- 1 c. flour
- 2/3 c. ground pecans
- 1/4 c. packed brown sugar
- 3 Tbsp. shortening
- 1 tsp. vanilla
- 1 c. sifted powdered sugar
- 2 Tbsp. chocolate syrup
- 3/4 c. butter, softened
- 1/2 to 1 tsp. instant coffee
- 2 eggs
- 3 sq. unsweetened chocolate
- 1 c. whipping cream
- 1 Tbsp. powdered sugar
- For crust, combine flour, pecans and brown sugar.
- In a heavy saucepan, melt shortening and 1 square of chocolate over low heat, stirring constantly.
- Stir into flour mixture until combined.
- Mix vanilla and water and sprinkle over mixture while tossing.
- Form into a ball.
- Roll out to make a 12-inch circle between 2 sheets of wax paper.
- Remove waxed paper.
- Place crust into a 9-inch pie plate; flute edge.
- Prick well.
- Bake until surface appears dry. Cool.
