Oatmeal Butterscotch Bars
- 1 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/8 tsp. salt
- 1 c. butter or margarine (room temperature)
- 1/2 c. granulated sugar
- 1/2 c. brown sugar, packed
- 2 eggs
- 1 tsp. vanilla extract
- 3 c. uncooked regular or old-fashioned rolled oats
- 1 (12 oz.) pkg. butterscotch flavored chips
- 1 c. (6 oz.) milk chocolate chips
- Combine flour, baking soda, cinnamon and salt.
- In a large mixing bowl, cream the butter and sugars until smooth.
- Beat in the eggs until mixture is light.
- Add the vanilla extract, rolled oats and butterscotch chips. Turn into a lightly greased 15 1/4 x 10 1/2-inch baking pan. Bake at 375u0b0 for 20 to 25 minutes or until center of the bars feel firm.
- Remove from oven.
- Sprinkle with milk chocolate chips.
- Let stand 2 to 3 minutes until chips melt. Spread melted chips over the bars. Cut into 2-inch squares.
- Serve warm or cool.
- Yields 35 (2-inch) bars.
