Broccoli Salad
- 2 - 3 small head broccoli
- 6 to 8 slices cooked bacon, crumbled
- 1/2 cup chopped sweet onion
- 1/2 cup dried cranberries
- 4 oz roughly chopped pecans
- 1/2 cup halved cherry tomatoes
- 8 oz chevre style goat cheese, optional
- 3/4 cup mayonnaise
- 3 tablespoons apple cider vinegar
- 3 tablespoons dijon or honey dijon mustard
- 2 tablespoons sugar
- Salt and white pepper
- REmove the broccoli stem and leaves. Cut the broccoli into bite-size florets. Place in a large bowl. Add the crumbled bacon, onion, cranberries, pecans, tomatoes, and if using, goat cheese. In a small bowl, combine the remaining ingredients, stirring well. Add to broccoli mixture and toss gently.
