Bean & Chorizo Tostaditas
- 6 oz of loose Chorizo Sausage
- 1 large or 2 medium Jalepeno peppers finely diced
- 1/2 of medium onion finely chopped
- 28 oz of mashed pinto beans (refried)
- 1 package of round nacho chips(9-14 oz)
- 8 oz of shredded Quesadilla or Oaxaca cheese
- for garnish:
- finely chopped tomatoes
- chopped Cilantro
- Chopped green onion
- Dollop of sour cream
- Saute jalapeno pepper, onion, and chorizo in a medium skillet over medium heat. When sausage is cooked, add the beans. Simmer until warm, approximately 10 minutes. Season with salt and pepper to taste. Spoon mixture onto round nacho chips. Top mixture with grated quesadilla or Oaxaca cheese. Place under broiler until cheese is melted and slightly browned. About 3-5 minutes. Remove and garnish as desired
