Fire Roasted Chicken Chile W/Rice
- 2-3 de-boned chicken breast
- 1/4 cup white onion cubed
- 1/4 cup red onion cubed
- 1 can bush reduced sodium kidney beans (drained)
- 1 can bush reduced sodium black beans (drained)
- 2 cans Safeway Fire Roasted Salsa
- 1 tablespoon fresh chopped garlic
- 2 small red/ green/yellow sweet peppers ea
- 1 tsp ground pepper
- 1 tsp kosher salt
- 1/3 cup jasmine white rice
- 1/2 cup chopped cilantro
- Brown chicken in 1 tablespoon olive oil
- Mix in the rest of the above ingredients
- (Rice will cook with rest of ingredients).
- Simmer for 15min
- Place on low for 15 min
- Add salt/pepper
- Serve when ready
- Top with Cilantro and Lime
