Bold Pasta Salad
- 1 box fun pasta (pin wheels, corkscrew, bow tie...)--cooked and drained.
- 1 can corn ------drained
- 1 can black beans ------drained
- 1 can garbanzo beans ------drained
- 1 small can sliced black olives ---------drained-optional
- 1 can small sliced green olives -----drained --optional
- 1 can rotel -----drained
- 1/2 C diced fresh tomato--grape tomatoes preferred
- 1-2 cups of mayonnaise
- 1 fresh basil leaf chopped finely
- 1/8 tsp black pepper
- 1T olive oil
- 1- 2T or more Cajun spice blend---to taste
- Prepare the pasta according to directions and drain.
- Drain corn, black beans, garbanzo beans, olives and rotel over pasta. Let drain while you mix 1 cup of mayonnaise, olive oil, herbs and spices.
- Stir in pasta and beans until well mixed. Extra mayonnaise may be needed for a creamy texture. Add extra spices to taste.
- Cooling before eating allows the flavors to blend.
- Extra optional additions:
- pepperoni,shredded cheese,capers, artichoke hearts, ham or chicken chunks.
