Fresh Greens With Parmesan Pecan Cups

  1. Nuts:
  2. Melt butter in saucepan and add the rest of the ingredients. Saute for 2-3 minutes until glazed. Remove nuts to waxed paper to dry.
  3. Parmesan Cups:
  4. Preheat oven to 350 degrees. Place rounds of the cheese approximately 2 inches in diameter on a non-stick cookie sheet about 3 inches apart. You should have about eight small rounds. Bake until melted and beginning to brown. Watch carefully as they brown quickly. Remove with metal spatula while warm and drape over the bottom of a small cup. Allow to dry and then store in air tight container.
  5. Dressing:
  6. Mix all ingredients in shaker bottle and shake well. Store in fridge until serving time. Shake well again.
  7. Arrange greens on four serving plates. Drizzle with dressing. Arrange one or two parmesan cups on top and place nuts inside cups.
  8. Garnish with shaved parmesan.
