Gift From The Sea
- 1 lb angel hair or linguini.
- 3 small cans diced tomatoes with basil, garlic and oregano.
- 1 small can crushed tomatoes.
- 1 small can tomato paste.
- 2 T olive oil.
- 3 cloves fresh garlic, chopped.
- 3 shallots chopped.
- 1 bunch fresh basil, chopped. 1/4 tsp red pepper flakes. 1/8 tsp dried oregano.
- 1/2 cup white wine.
- and 1 small bunch of fresh parsley, chopped.
- salt and pepper to taste.
- And frozen raw shrimp, thawed (Costco has a great bag of raw shrimp shelled and deviened.) Plus any other seafood you desire like scallops, lobster, clams, oysters or white fish.
- In olive oil, gently saute garlic, shallots, and red pepper flakes. Add tomatoes, white wine, fresh basil and dried oregano. Simmer lightly for about 10 minutes. Add shrimp and other shellfish of your choosing. (I love scallops, lobster chunks, and some white fish.) When fish is done, throw in fresh chopped parsley, and toss for about a minute more. The frsh herb will brighten the whole dish.
- Serve over pasta with rustic garlic bread and a salad. Voila Delicious,easy and FAST!
