Turkey Veggie Sloppy Joe
- 1 lb ground turkey (I perfer the slightly higher fat variety)
- 2 tablespoons extra virgin olive oil (or a combo of butter and EVO)
- 1 large chopped onion
- 2 large cloves garlic minced
- 1 medium bell pepper chopped(green/red/yellow you pick)
- 8 oz baby bella mushrooms sliced
- 2 medium zucchini diced(green/yellow)
- 1 14.5 oz can diced tomatoes (or fresh)
- 8 oz tomato sauce (I use no salt)
- 1/2 teaspoon fennel seeds
- 6-8 cloves
- 1 teaspoon cumin
- 1 tablespoon chili powder
- 1/2 teaspoon cardamom (optional)
- 1/4+ teaspoon garam masala (optional)
- 1/4 teaspoon red pepper (optional)
- 1 tablespoons ketchup
- Salt & Pepper to taste
- Saute the onions, garlic and peppers in the EVO for about 5-7 minutes, until starting to brown. Add the mushrooms and saute for another 5 minutes. Add the zuccini and continue to saute for another 5 minutes. Remove from heat and set aside. Using the same pan, add a very little bit of oil, if needed, and brown the ground turkey. While browning, add the fennel seeds, cloves, cumin, chili powder, cardamom, garam masala and red pepper. Once the turkey is completely browned, add the onion/mushroom/zucchini mixture, tomatoes, tomato sauce and ketchup.
- Mix together, reduce to low heat and simmer for 45-50 minutes.
