Minestrone

  1. Add oil and butter to a large pot and heat until melted
  2. Add onion and cook until soft
  3. Add garlic and bacon. Cook until bacon is crispy (or to taste) - about 8 mins
  4. Add carrot and celery. Cook until soft (about 5 mins)
  5. Add stock, tomato, beans, bay leaves and parmesan chunks
  6. Cover, reduce heat and cook for as long as you can
  7. Just before eating, add kale and pasta and extra veg if using. Cook for approx 10 mins
  8. Serve with toast and extra cheese
