Minestrone
- 1/2 Cup Olive Oil
- 20g Butter
- 3 Onions, thinly sliced
- 3 cloves garlic, thinly sliced
- 4 slices bacon, chopped
- 2 carrots, roughly chopped
- 1 celery stalk, thinly sliced
- 1.5 litres chicken stock
- Chunk of parmesan, roughly chopped
- 2 bay leaves
- Handful of Macaroni (optional)
- Bunch of kale, roughly chopped
- 1 tin mixed beans
- 1 tin choped tomatoes
- Courgette (optional)
- Add oil and butter to a large pot and heat until melted
- Add onion and cook until soft
- Add garlic and bacon. Cook until bacon is crispy (or to taste) - about 8 mins
- Add carrot and celery. Cook until soft (about 5 mins)
- Add stock, tomato, beans, bay leaves and parmesan chunks
- Cover, reduce heat and cook for as long as you can
- Just before eating, add kale and pasta and extra veg if using. Cook for approx 10 mins
- Serve with toast and extra cheese
