Ziti Zucchini
- Two large zucchini squash, cut into 1" thick coins
- 8 ounces whole wheat ziti
- 2 cups bread crumbs
- 1 egg (or egg substitute)
- 1/4 cup milk (or soy or rice milk)
- 1 16 ounce jar of spaghetti sauce
- Freshly grated parmesan cheese
- Prepare pasta according to package directions; set aside.
- Simmer sauce over low heat, in covered pan.
- Heat oven to 400 degrees. Spray a large cookie sheet with cooking spray.
- Beat egg in a small bowl, and add milk. Stir. Pour bread crumbs into zipper bag.
- Dip zucchini slices into milk/egg mixture. Then place two or three slices into the zipper bag and shake until fully coated. Set slices on sprayed cookie sheet. Bake for 8 minutes, then turn over and bake for another 8 minutes.
- Put ziti into individual bowls, and top with several slices of the breaded zucchini. Add sauce and parmesan cheese to taste.
