Thai Beef Salad
- 12 oz well trimmed skirt steak
- Dressing:
- 1/4 cup fresh lime juice
- 2 T vegetable oil
- 2 t sugar
- 1 1/2 t minced jalapeno pepper
- 1/4 t salt
- 1/4 t minced garlic
- Salad:
- 4 cups bean sprouts
- 1 1/2 cups thinly sliced cucumber
- 1/4 cup chopped fresh mint leaves
- 8 cups torn lettuce
- Chopped peanuts for topping
- Grill or broil steak on oiled grill or broiler rack for 5-7 minutes, turning once for
- medium rare. Let stand 5 minutes, then slice thinly against the grain.
- Whisk dressing in large bowl until blended. Add steak and remaining ingredients
- except the lettuce. Toss to mix. Line serving platter with lettuce; mound beef
- salad on top. Sprinkle with peanuts.
