Chicken Tacos
- 2 c. chopped cooked chicken
- 3/4 tsp. salt
- 1 small can chopped green chilies, drained
- 1 small onion, sliced
- 2 Tbsp. vegetable oil
- 10 taco shells
- 1 small avocado
- lemon juice
- 1/2 tsp. salt
- 1 c. shredded cheese
- 2 c. shredded lettuce
- 1/3 c. sliced olives, drained
- 1/3 c. taco sauce
- sour cream
- Heat chicken, 3/4 teaspoon salt, chilies and onion in oil over medium heat, stirring occasionally, until chicken is hot.
- Heat shells as directed on package.
- Cut avocado lengthwise into slices; sprinkle with lemon juice and 1/2 teaspoon salt.
- Spoon about 1/4 cup chicken mixture into each shell.
- Top with cheese, lettuce, olives and avocado.
- Serve with taco sauce and sour cream.
- Yields 10 tacos.
