Crumby Chocolate Raspberry Bars
- 1 cup butter, softened
- 2 cups all-purpose flour, sifted
- 1/2 cup light brown sugar
- 1/4 tsp salt
- 1 1/2 cups semisweet chocolate morsels, divided
- 1 1/4 cups sweetened condensed milk
- 1/2 cup chopped walnuts, optional
- 1/3 cup seedless raspberry spreadable fruit
- Preheat oven to 350 F. Using an electric mixer, cream the butter and sugar about 2-3 minutes. Add the flour and salt, blend until well mixed. With floured fingers, press 1 3/4 cups of the crumb mixture onto the bottom of a greased 13x9 inch baking pan; reserving remaining mixture. Bake for 12 minutes or until edges are golden brown.
- Meanwhile, combine 1 cup morsels and condensed milk in a small saucepan. Over low heat, stir continuously until smooth. Spread chocolate mixture over the hot crust. Stir optional nuts into reserved crumb mixture; sprinkle over chocolate filling. Drop teaspoons of raspberry fruit over crumb mixture. Sprinkle with remaining morsels. Bake for 25-30 minutes or until center is set.
- Let cool in pan for approx 20 minutes. While still warm, cut into 24 bars and remove from pan. Serve warm or can cool completely on a wire rack.
- Garnish your serving plate with fresh raspberries & mint leaves!
