Oatmeal White Chocolate Cranberry Drops
- 1 cup all purpose flour
- 2 eggs
- 1/2 tsp. baking soda
- 1 tsp. vanilla extract
- 2tsp. tangerine zest
- 1/4 tsp. salt
- 1 cup butter (2 sticks) softened
- 3/4 brown sugar
- 1/2 cup granulated sugar
- 3 cup quick oats
- 1 cup white chocolate chips
- 1 cup dried cranberries
- 1. Preheat oven to 350 degrees.
- 2. In a medium bowl, combine flour, baking soda, and salt.
- 3. Beat butter and both sugars in a large bowl with electric mixer until creamy. Beat in eggs, vanilla, and tangerine zest, Beat in flour mixture. Stir in oatmeal one cup at a time. Fold in white chocolate chips and cranberries.
- 4. Drop batter by heaping teaspoonfuls, 1 inch apart onto ungreased cookie sheets. Bake for 10 minutes (unless you make larger sized cookies) Let cool.
