100 Calorie Pumpkin Chocolate Chip Cookies
- 1 1/2 c. (or a 15 oz. can) pumpkin puree + a couple drops of red food coloring
- 1 c. sugar (natural ingredient and okay in moderation)
- 1/2 c. applesauce
- 1/4 c. ground flax seed (or an egg)
- 1 1/2 c. whole wheat flour (you CAN NOT tell the difference)
- 1 c. oats
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. nutmeg
- 1/4 tsp. all-spice
- 1/2 tsp. salt
- 1 tsp. baking soda dissolved in 1 tsp. milk
- 1 Tbls. vanilla extract
- 1 1/4 c. dark chocolate chips
- Blend together pumpkin, food dye, sugar, applesauce, flax(or egg if you prefer), and spices. In a separate bowl combine flour and baking powder. Then add dry ingredients into the wet bowl and add baking soda mixture and vanilla. Add in oats and chocolate chips and stir by hand (this way you don't break up the yummy parts or over mix the dough). If you let the dough sit in the fridge for 20 or so minutes it will form much easier. Make 2 inch balls of dough (25 cookies about) and place on cookie sheets 3/4 inch apart. Bake at 365 degrees for 12-14 minutes. They are best if eaten cold (can be stored in fridge or freezer).
