Red ’N “Green” Pizza

  1. Preheat oven to broil. Place spinach in a food processor or blender. Using the pulse function, cut until spinach is very finely chopped. (Be sure not to chop too long. If you do, it will become pureed.) Scoop spinach out of food processor and place in a bowl.
  2. Place tomatoes, spinach, oregano, garlic and pepper in the food processor or blender. Pulse until very finely chopped. Scoop out and place in the bowl with the spinach. Mix well. Pour mixture into a strainer with a bowl underneath. Strain the excess water from the sauce by stirring and patting the sauce gently. Place back into a bowl.
  3. On a baking sheet, place pitas or pieces of flat bread evenly. Place in the oven on a rack positioned in the middle vertically, not too close to the top burners. Broil for 2 minutes, or until bread turns a light, crispy brown. Remove from oven. Turn bread over so that the cooked sides are face down. Brush tops with canola oil. Place back into the oven and broil for 2 minutes, or until bread turns a light, crispy brown. Remove from oven.
  4. With a spoon, scoop sauce and place evenly on top of each piece of bread. Sprinkle cheese evenly on top of each piece. Place in the oven and broil for 3-4 minutes, until cheese is melted and browned. Remove from oven. Cool for a few minutes then slice each piece into fourths. Serve immediately and eat to your heart's content!
