Feta Mushrooms

  1. Brush the mushrooms clean.
  2. Remove stems and reserve.
  3. Brush caps with melted butter; arrange, hollow side up, in a baking dish.
  4. Sprinkle with salt and pepper.
  5. Mince reserved mushroom stems.
  6. Heat small frying pan; add butter.
  7. Add stems and onions; saute until liquid has been absorbed.
  8. Add flour to frying pan; mix well.
  9. Add milk, stirring until thickened a bit.
  10. Add parsley, garlic, salt and pepper to taste; mix well.
  11. Add Feta cheese to mixture; fill mushroom caps.
  12. Top with Kasseri and a few dots of butter.
  13. Bake at 375u0b0 for 15 to 20 minutes, until stuffing has browned lightly and cheese is melted.
  14. Makes 15 appetizers.
