Cold Grilled Seafood Salad
- 1/2 lb. grilled shrimp or lobster meat chilled
- 1 med. avocado removed from skin and sliced thinly
- 1 med. ripe tomato cored and sliced into wedges
- 1/2 large english cucumber scored horizontally with a fork and sliced thinly
- 1/2 cup thinly sliced celery
- 1 large boiled egg roughly chopped
- juice of one med. orange, about 3 ozs.
- juice of 2 med. limes, about 4 ozs.
- 2 tbls. honey
- 1 tbl. dijon mustard
- 3 ozs. good olive oil
- 1 tbl. drained capers
- 1/2 tsp. dried tarragon
- sea salt and fresh ground pepper to taste
- wisk juices, tarragon,honey, olive oil, capers, and mustard together until emulsified, add remaining ingredients, mix completely, chill for 20 minutes and serve
