Ladyfinger Supreme
- 3 pkg. ladyfingers, plain
- 1 pt. heavy cream
- 11 oz. cream cheese, room temperature (use one 8 oz. and one 3 oz.)
- 1/2 c. sugar
- 1 tsp. vanilla
- 1 can pie filling (Lucky Leaf or other brand)
- Split the ladyfingers and making sure the rounded side is facing out and the cut side in, line the sides and bottom of a 9 or 10-inch spring-form pan.
- Keep the balance of the ladyfingers.
- Set aside.
- Cream the cream cheese; add vanilla and sugar.
- Cream well. Whip heavy cream until very stiff.
- Fold heavy cream and cream cheese mixture together.
- Pour half the cream cheese mixture over the ladyfingers.
- Cover this with ladyfingers that were set aside. Cover with all the balance of cream cheese mixture over the ladyfingers.
- Top with pie filling.
- Chill in refrigerator for at least 3 hours or overnight.
