Mushroom Crab And Almond Salad
- 1 package of crab/lobster surimi
- 1 cup frozen green peas
- 1 carton (4-6oz) button mushrooms-quartered plus stems
- 2-3 green onions sliced
- 8 oz can whole water chestnuts
- 1/4 cup dill (or to taste)Chop.
- 1/4 cup roasted unsalted almonds
- juice of one lemon
- 2 heaping tblsps lite Mayonnaise (Miracle Whip)
- Coarse salt (sea salt)2 tsp
- 1/2 tsp fresh ground pepper
- Cut the crab sticks into chunks .Set aside
- Put frozen peas in bowl.Pour one cup water over it-to defrost
- Cut water chestnuts into quarters
- In a serving bowl-put mushrooms,onions,water chestnuts,dill, crab
- Drain and add peas
- Add mayo,lemon juice,salt pepper
- Mix.Taste and adjust seasoning.
- Add almonds and toss.
- Serve on lettuce leaf.
