Chunky Beef-Fritters
- 2 lb. cooked, unseasoned, cold roast beef (chuck, rump or round), cut into bite-size chunks (1/2 to 1-inch size)
- 3 eggs
- 1 Tbsp. flour
- 6 Tbsp. milk
- 1 1/2 c. self-rising flour
- 1/4 tsp. black pepper
- 4 tsp. salt
- Mix milk with 1 tablespoon of flour and stir into eggs.
- Mix together flour, black pepper and salt.
- Dip roast beef chunk in egg mixture and roll in flour mixture.
- Drop floured beef chunks into hot cooking oil and deep fry until brown (use medium heat).
- Drain and serve hot.
- Takes about 15 minutes and yields 4 to 6 servings (time does not include cooking time for roast).
- Serve on divided serving dish surrounded by pickles, crab apple or cherry tomatoes, green pepper rings, carrot curls, celery sticks and parsley.
- Vary garnishes according to your taste.
