Cucumbers And Yogurt Salad With Garlic

  1. Peel 1 or 2 garlic cloves and put into a bowl then add a dash of salt. Crush the garlic cloves well till all the salt is absorbed by the crushed garlic. Taste the cucumbers to make sure that they are not bitter. Cut the cucumbers in half lengthwise, and then slice diagonally to get thin half circles.
  2. Add the sliced cucumbers to the bowl. Add the plain yogurt to them, and then the mint too, gently mix together all the ingredients (your hands work great for this). Chill for at least 4 hours, overnight it best, but it can be eaten right away. Drizzle the olive oil on top of it just before serving, and garnish with mint sprigs. Serves 6. (Option: you can lightly toast and sweeten the garlic before adding to this recipe if you don't like the bite and taste of fresh garlic).
