Raisin-Cheese Pie
- 1/2 c. sugar
- 1/8 tsp. salt
- 4 Tbsp. cornstarch
- 1 Tbsp. margarine
- 1 Tbsp. lemon juice
- 1 dessert spoon Angostura aromatic Bitters
- 2 c. seedless raisins
- 1/2 orange
- 1 1/2 c. water
- 9 thin slices Cheddar cheese or 1 c. grated cheese
- Combine sugar and cornstarch in a saucepan and blend well.
- Add raisins and water.
- Stir and cook over medium heat until thick and clear.
- Remove from heat and add salt, margarine, grated orange rind and juice from the orange, Angostura aromatic Bitters and lemon juice.
- Cool filling, then pour into 8-inch uncooked pastry shell.
- Arrange the cheese slices or grated cheese over the filling and cover with top crust.
- Seal and crimp edges of pie.
- Bake in a hot oven at 450u0b0 for 15 to 20 minutes.
- Should be nicely browned. Serves 6.
