Egyptian - Alexandrian Barbeque Fish
- 10 Fish Tilapia
- 4 bunches cilantro
- 4 heads Hot green chilis
- 5 tablespoons Cumin
- 2 tablespoons Vinegar
- 2 tablespoons Olive Oil
- 12 ounces wheat flour
- 1 head Garlic
- salt
- pepper
- Get the fish fresh from the market and have the vendor clean it by trimming the
- gills, removing the scales and cleaning the insides. Do additional cleaning at home to remove any blood and intestines.
- Chop and Mix all the above ingredients (except the wheat) and form a paste
- like mix. Don't use the food processor as it might make the mix watery I prefer a kitchen mortar.
- Sprinkle olive oil and salt inside and outside the fish.
- Stuff the fishes with the paste Mix and dust with the wheat flour.
- Barbeque till it gets that dark charcoal color on each side.
- Remove the fish from the barbeque and dip for a few seconds in a hot water + Salt
- Mix to remove additional wheat and to give it flavor.
