Rosie'S Unfried Chicken
- 1 (4 lb.) chicken, skin removed, cut into 12 pieces
- 3 1/2 c. ice water
- 1 c. plain nonfat yogurt
- 1 c. Italian bread crumbs
- 1 c. flour
- 1 Tbsp. Old Bay seasoning
- 1/2 tsp. garlic powder
- 1/2 tsp. Creole seasoning
- 1/8 tsp. black pepper
- dash of cayenne pepper
- 1/2 tsp. dried thyme
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- Put cut pieces of chicken in ice water for 1/2 hour.
- Mix last 10 ingredients listed for breading.
- Take chicken out of ice water, dip in yogurt and then in breading.
- Place in a pan which has been sprayed with light cooking spray.
- Spray each piece of chicken to prevent drying.
- Bake for 1 hour at 350u0b0 turning every 20 minutes.
