Nacho Ordinary Taco Salad
- 1 lb ground beef
- 1/2 onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp child powder
- 2 tsp cumin
- 2 cups halved grape tomatoes
- 1/3 cup salsa
- 1 head romaine lettuce, chopped
- 1 cup frozen corn, thawed
- 1 cup canned black beans, rinsed
- 1 cup cheddar cheese, shredded
- 4 green onions, chopped
- 1 avocado, sliced
- 2 whole wheat tortillas, cut into strips
- garlic salt
- 1 tbsp honey
- 2 tbsp cilantro, chopped
- 1 tbsp red wine vinegar
- 1 lime zested
- 1/4 cup lime juice
- 1/2 cup sour cream
- 1 clove garlic, minced
- 1/4 cup olive oil
- salt and pepper
- Brown beef and add onion and garlic to saute. Add spices and cook for 1 minute. Add tomatoes and salsa and cook until tomatoes soften. Remove from heat.
- While beef is cooking, preheat oven to 450. Brush tortilla strips with olive oil and sprinkle with garlic salt. Bake on baking sheet until golden and crispy.
- For dressing, blend all ingredients in blender.
