Corn Chowder
- 1 teaspoon vegetable oil
- 1 small onion, coarsely chopped
- 2 pkg. (1 lb. ea) loose pack frozen whole kernel corn thawed
- 1 can (14.5 oz.) light and fat free chicken broth
- 1 can (12 fl. oz.) evaporated milk (lowfat)
- 1/2 cup chopped red bell pepper
- 4 slices turkey bacon cooked and chopped
- 1/2 teaspoon chopped fresh rosemary (optional)
- Fresh ground black pepper to taste
- HEAT, vegetable oil in large saucepan over medium-high heat. Add onion, cook, stirring until tender. Add 4 cups corn, cook, stirring until tender. Add chicken broth, cook stirring frequently, approx. 15 min or until corn is very soft.
- PLACE corn mixture in food processor or blender, process until smooth. Return to saucepan and stir in remaining corn, evap. milk, bell pepper, bacon and rosemary. Cook, stirring frequently until chowder is thick and bell pepper is tender. Season to taste.
