Karen'S Meatloaf
- Meatloaf
- 1 1/2 lbs. lean ground beef
- 1/2 lb ground pork
- 1 medium onion, small dice
- 1/2 cup grated pecorino romano cheese
- 1/2 cup toasted breadcrumbs (from day old or stale loaf bread)
- 1 medium egg
- 1/4 cup milk
- 1 tsp. salt
- 1 tsp. pepper
- Topping
- 1 cup tomato catsup
- 1/2 cup tightly packed brown suger
- 1/4 cup honey or spicy mustard
- Mix all loaf ingredients together and place in one large loaf pan or a couple of small loaf pans. Mix together all topping ingredients and pour on top of meatloaf. Spread out evenly. Place loaf/loaves in a 400 degree oven for one hour. Make sure loaf/loaves have a sheet pan underneath each for any spillover.
