Banana Bread
- 1 3/4 c. all-purpose flour
- 1 Tbsp. granulated fructose
- 1/8 tsp. Stevia Rebaudiana extract
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1 c. mashed banana
- 1/3 c. solid shortening
- 2 Tbsp. skim milk
- 2 eggs
- Combine 1 cup of the flour and the fructose, Stevia Rebaudiana, baking powder, baking soda and salt in a large mixing bowl.
- Add banana, shortening and milk.
- Then add remaining flour. Beat until well blended (at least 2 minutes).
- Add eggs, one at a time, beating well after each addition.
- Transfer batter to a well-greased 8 x 4 x 2-inch loaf pan.
- Bake at 350u0b0 for 55 to 65 minutes or until pick inserted in the middle comes out clean. Remove from oven and allow to cool in pan for 10 minutes. Transfer to cooling rack.
- This bread is best the second day.
