Blueberry-Pear Cobbler
- 1 (16-ounce) can pear halves in juice, undrained
- 2 1/2 Tablespoons sugar
- 1 Tablespoon cornstarch
- 2 cups fresh or fresh are frozen blueberries. Thawed
- Vegetable cooking spray
- 3/4 cup all-purpose flour
- 2 teaspoons sugar
- 1 teaspoon baking powder
- 1 Tablespoon margarine
- 1/3 cup skim milk
- 1) Drain pears, reserving 3/4 cup liquid. Chop pears, and set aside.
- 2) Combine 2 1/2 Tablespoons sugar and cornstarch in a saucepan; stir well. Stir in resered liquid; bring to a boil over medium heat. Cook 1 minute, stirring constantly. Remove from heat, and gently stir in pears and blueberries. Spoon into an 8-inch square baking dish coated with cooking spray.
- 3) Combine flour, 2 teaspoons sugar and baking powder in a bowl; cut in margarine with pastry blender until crumbly. Add milk, stirring just until dry ingredients are moistened. Drop by Tablespoonfuls over fruit mixture. Bake at 400 degrees for 20 to 25 minutes or until golden.
