Kefta Brochettes

  1. Combine all the ingredients in a large mixing bowl and knead well. Let ripen at room temperature for at least 1 hour.
  2. Using wet hands, separate the mixture into 24 sausage shapes. Pack 2 of each onto skewers. Alternatively form the mixture into 1" meatballs for tajine.
  3. Grill or broil for 2-3 minutes per side until well done.
  4. Serve with Moroccan bread (French baguettes will do in a pinch)
