Taco Salad
- 3 Hearts of Romaine Lettuce
- 2 large Tomatoes
- 1 medium size White Onion
- 1 can Black Beans
- 1 can Kidney Beans
- 1 bag Shredded Cheddar or Mexican Blend Cheese
- 2 Tbsp Olive Oil
- 2 lbs Ground Beef Chop Meat
- 2 packets Ortega Taco Seasoning Mix
- 1 cup Water
- 1 bag Doritos Nacho Cheese flavor
- 1 Ziploc freezer size bag
- 1 Wishbone Thousand Island Dressing 8 oz. bottle
- Heat olive oil in a medium saucepan over low heat. Add 2 lbs ground beef chop meat and break up with spoon. While meat cooks, prepare other salad ingredients.
- Chop all three hearts of romaine lettuce.
- Slice both tomatoes into diced cubes.
- Slice 1/2 white onion into diced cubes.
- Drain cans of both kidney and black beans and mix together.
- After meat has browned on both sides, add water and stir. Then add both packets of Ortega taco seasoning mix and stir. Let meat cook for few more minutes and then remove from heat. Drain meat in a colander and set aside to cool.
- Combine chopped lettuce, tomatoes, onions, and beans into large bowl. Stir in meat once it has cooled. Generously mix in Thousand Island dressing until desired taste. Stir in 1/2 bag of shredded cheese.
- Fill Ziploc freezer bag with Doritos and seal tight. Crush Ziploc bag with your hands to break the chips into small pieces. Sprinkle the crushed Doritos over the salad and mix one final time. You are now ready to serve. **Note: DO NOT ADD THE DORITOS TOPPING UNTIL READY TO SERVE.
