Braised Pulled Pork Sandwiches And Caramelized Onions And Apples On Spicy Cheddar Cheese Biscuits
- For the Pork:
- 1 eight pound pork shoulder
- 4 tbsp. Cumin
- 4 tbsp. brown sugar
- 2 tbsp. salt
- 2 tbsp. pepper
- 4 tbsp. vegetable oil
- 4 cups of beef, pork or chicken stock
- Biscuits:
- 2 cups white flour
- 1 tbsp. Baking powder
- 1 tsp. salt
- 8 tbsp. cold unsalted butter
- 4 tbsp cold vegetable shortening
- 1/2 cup buttermilk
- 1 large egg
- 1 Cup extra sharp cheddar, grated
- 1 large jalapeno pepper
- 1 egg for an egg wash
- Caramelized Onions and Apples
- 2 Macintosh apples
- 3 Vidalia Onions
- 2 tbsp maple syrup
- 2 tbsp olive oil
- salt and pepper
- Pork Instructions:
- Mix Cumin, brown sugar and salt and pepper together in a small bowl. Rub mixture all over the pork shoulder. Refrigerate over night. Bring the pork to room temperature. Preheat oven to 325 degrees. Heat larger roasting pan on stove top at medium high heat. Add vegetable oil to the pan. Let it get hot and add the pork to the pan. Brown on all sides. Add 4 cups of beef, pork or chicken stock to the bottom of the pan with the pork. Cover and let cook for approximately 7-8 hours or until falling apart. Add more stock or some water to the pan if it begins to dry out. Remove pork from the pan and let rest on cutting board for 20 minutes. Shred pork with two forksif its not falling apart on its own!
- Biscuit Instructions: Preheat the oven to 425 degrees. Place 2 cups of flour, the baking powder, and salt in your food processor. Add the butter and shortening then mix until the butter/shortening is the size of peas. Combine the buttermilk and egg in a small measuring cup and beat lightly with a fork. Add the buttermilk mixture to the flour mixture and pulse only until moistened. Add the cheddar and chopped jalapeno and pulse only until roughly combined. Put mixture onto a well-floured board and knead lightly about 6 times. Roll the dough out to a rectangle 10 by 5 inches. Cut the dough into 8 squares. Transfer to a sheet pan. Brush the tops with the egg wash, and bake for 20 to 25 minutes, until the tops are browned and the biscuits are cooked through.
- Caramelized Onions and Apples Instructions: Thinly slice cored and peeled apples and onions. Heat frying pan and add olive oil. Add apples and onions to the pan. Sprinkle with salt and pepper. Once apples and onions are soft and golden in color add maple syrup. Heat for another minute then shut off the heat. To assemble the sandwiches cut one biscuit in half. Place generous amount of pork mixture and a spoonful of the onion and apple mixture on top. Top with other half of the biscuit and enjoy!
